Chocolate Cupcakes:<br />
1 1/4 cups unbleached, all-purpose flour<br />
2 tsp. baking soda<br />
2 tsp. baking powder<br />
1/4 tsp. salt<br />
1 1/4 cups granulated sugar<br />
1 cup water<br />
4 ounces unsweetened chocolate, chopped<br />
1 stick (8 Tbsp.) unsalted butter, cut into pieces<br />
2 tsp. pure vanilla extract<br />
2 large eggs, lightly beaten</p>
<p>Filling:<br />
4 Tbsp. unsalted butter, room temperature<br />
1 cup powdered sugar<br />
1 tsp. pure vanilla extract<br />
3 Tbsp. heavy cream<br />
1 cup marshmallow creme</p>
<p>Chocolate Ganache:<br />
6 ounces bittersweet chocolate, chopped<br />
1/2 cup heavy cream<br />
1 Tbsp. unsalted butter<br />
1 tsp. pure vanilla extract</p>
<p>Icing:<br />
4 Tbsp. butter, softened<br />
1 Tbsp. milk<br />
1 cup powdered sugar<br />
1/4 tsp. vanilla</p>
<p>Preheat the oven to 350 degrees F with the rack in the center<br />
position.</p>
<p>Spray muffin tins with non-stick cooking spray.</p>
<p>Start by preparing the cupcakes.  Place sugar and 1 cup of water in<br />
a medium saucepan. Bring to a boil, stirring frequently until the<br />
sugar dissolves. Transfer to a large bowl. Add the chocolate and<br />
butter and let sit, stirring occasionally, until the chocolate is<br />
melted and the mixture has cooled slightly. Stir in the vanilla.</p>
<p>In a separate bowl, sift together the flour, baking soda, baking<br />
powder and salt.</p>
<p>Using an electric mixer add the eggs to the chocolate mixture,<br />
beating on medium speed until well combined.  Next, slowly mix in<br />
the dry ingredients on low speed until the batter becomes smooth.</p>
<p>Pour the batter evenly between the prepared muffin tins. Fill each<br />
muffin half way and bake for 18-20 minutes or until a toothpick<br />
inserted in the center comes out clean. Cool in the pans for 25<br />
minutes, then transfer to a rack and let cool completely.</p>
<p>To prepare the filling, Use a mixer to cream the butter until light<br />
and fluffy. Beat in 1/2 cup confectioners&#8217; sugar. Add the vanilla<br />
and 1 Tbsp. heavy cream and beat until smooth. Alternating between<br />
batches, beat in the remaining 1/2 cup confectioners&#8217; sugar and 2<br />
Tbsp. heavy cream. Beat in the marshmallow creme. Cover and<br />
refrigerate until ready to use.</p>
<p>Next, make the chocolate ganache that goes on top of the cupcake.<br />
Place the chocolate in a stainless-steel bowl. Use a medium<br />
saucepan to heat the cream and 1 tablespoon butter until it just<br />
begins to boil, then pour over the chocolate. Let stand for 5<br />
minutes. Whisk until smooth. Add 2 tsp. vanilla while whisking; let<br />
stand until cool.</p>
<p>Put the cream filling into a pastry bag fitted with a medium star<br />
tip. Insert the tip into the center of each cupcake top; then<br />
squeeze some of the cream filling into it.</p>
<p>Spoon a tablespoon of the chocolate ganache onto each cupcake and<br />
lightly spread with a spatula or a knife. Chill for at least 10<br />
minutes.</p>
<p>Meanwhile, use an electric mixer to beat the remaining 4 Tbsp.<br />
butter, 1/4 teaspoon vanilla, milk and confectioners&#8217; sugar until<br />
smooth, adding more milk if needed. Spoon into a pastry bag with a<br />
small tip. Pipe the trademark curly-q design across the top of each<br />
cupcake.</p>
<p>Serves 18</p>

At the time, the majority of hvac filters were either fiberglass or some other fibrous material designed to remove particulate that was suspended in the air before it entered the HVAC system. Over time, HVAC manufacturers realized that by improving the quality of the filter used in the HVAC system, not only the equipment could be protected but also the air that was circulated in the dwelling could be improved dramatically. As other filter materials were introduced, the process of discerning the difference between one filter and the other became difficult as there was no clear cut way to differentiate. Recognizing this problem, a national association engaged in the Heating and Air Conditioning, ASHRAE, worked to develop a rating system for this purpose. <p><strong>Minimum efficiency reporting value</strong>, commonly known as <em>MERV rating</em> is a measurement scale designed in 1987 by the <a title="American Society of Heating, Refrigerating and Air-Conditioning Engineers" href="http://en.wikipedia.org/wiki/American_Society_of_Heating,_Refrigerating_and_Air-Conditioning_Engineers">American Society of Heating, Refrigerating and Air-Conditioning Engineers</a> (ASHRAE) to rate the effectiveness of air filters. The scale &#8220;represents a quantum leap in the precision and accuracy of air-cleaner ratings&#8221;<sup id="cite_ref-Wilkinson_0-0"><a href="http://en.wikipedia.org/wiki/Minimum_efficiency_reporting_value#cite_note-Wilkinson-0">[1]</a></sup> and allows for improved health, reduced cost and energy efficiency in <a title="HVAC" href="http://en.wikipedia.org/wiki/HVAC">heating, ventilation and air conditioning (HVAC)</a> design. For example, a <a title="HEPA" href="http://en.wikipedia.org/wiki/HEPA">HEPA</a> filter is often impractical in central HVAC systems due to the large pressure drop the dense filter material causes. Experiments indicate that less obstructive, medium-efficiency filters of MERV 7 to 13 are almost as effective as true HEPA filters at removing allergens, with much lower associated system and operating costs.<sup id="cite_ref-epa_1-0"><a href="http://en.wikipedia.org/wiki/Minimum_efficiency_reporting_value#cite_note-epa-1">[2]</a></sup></p>
<p>The scale is designed to represent the worst case performance of a filter when dealing with particles in the range of 0.3 to 10 <a title="Micrometre" href="http://en.wikipedia.org/wiki/Micrometre">micrometres</a>. The MERV rating is from 1 to 16. Higher MERV ratings correspond to a greater percentage of particles captured on each pass, with a MERV 16 filter capturing more than 95% of particles over the full range.</p>

				<content:encoded><![CDATA[<p><span style="color: #000000;">Few people consider the important role that air filters play in the quality of indoor air. If you suffer from allergies, auto immune diseases, hay fever, sinus problems or other respiratory problems, indoor air quality is especially important, however, I am convinced that good indoor air quality affects everyone. Here is why:</span></p>
<p><span style="color: #000000;">Our immune system is a wonderful thing. Every moment, our bodies are bombarded with viruses, bacteria, germs, etc. that can invade our bodies and make us sick or die. Our immune system is what we have to protect our bodies. An immune system is kind of like a bucket. It has the capacity to deal with a great deal of things, any one of which might be detrimental to our health. But just like a bucket, with each exposure to things that might make us sick, it &#8220;fills up&#8221; our immune systems capacity to fight intruders. The more exposure we have to intruders, the more full the bucket becomes. Once the bucket (our immune system) is full, neither the bucket or our bodies can hold any more. Of course, if we are filling a bucket, the run over would affect the area around the bucket whereas with our body, the overrun will affect our ability to ward off diseases and the like after our immune system has become overloaded. The result is the we get sick! </span></p>
<p><span style="color: #000000;">Now there are plenty of ways to protect ourselves and our immune systems, esp. indoors, but one easy and simple way is to insure that the air that circulates through our HVAC system and, consequently, through our home or office, is as pure as possible. Fortunately, all HVAC systems have a way to do this automatically: the air filter! All we have to do is pick a high quality filter, capable of removing as much of the impurities in the air as possible AND routinely replacing it with a clean one when it gets dirty. </span></p>
<p><span style="color: #000000;">AC Filters and Furnace Filters are rated through a system called the MERV rating. It determines how well the impurities that pass through filters is removed. The higher the numerical rating, the more efficient the filter. Of course, consideration needs to be given to the age of the system, etc. to insure you don&#8217;t buy a filter with too high of a MERV rating, but you are unlikely to do that. Most stores stock nothing rated higher than a MERV12 (currently) and most are have lower ratings than this. Older systems cannot usually handle a filter rated above MERV12 without either taxing the operating system or increasing the operating costs of the system or both. Newer systems are beginning to emerge that use MERV13 ratings and there is work underway to perfect a MERV16 filter. </span></p>
<p><span style="color: #000000;">In any event, you should choose a filter with a high MERV rating. Anything less than MERV8 is simply not good enough. The filter should be pleated. That means that the surface area of the filter material that the air flows through is twice as great as flat filters. In effect, you have the doubling of filtration. Secondly, you want the filter to be disposable. There are companies who make reusable filters but they are a hassle to clean, typically harbor mold and other intruders and often increase operating cost because the system has to work harder to force the air through them. </span></p>
